This Chocolate Gateaux is filled with a vanilla flavoured buttercream and delicious cherries. The sponge for the gateaux is a fatless sponge, having been made without any fats, such as butter and no flour.

A traditional gateaux is usually made with whipped cream and nuts, but the customer that ordered the cake requested buttercream instead as a preference.
